Meal Plan-ish

So.. I didn't post my meal plan last week. I just really didn't have the time! We DID eat though! :) I came down with strep the week before and I. was. miserable. I had a high fever, chills, horrendous body aches, and of course a sore throat. I went to the doctor on Wednesday afternoon and got some meds that evening. I started feeling better by Saturday. I shared it with Corey, so in essence I was caring for 4 children at one point! Poor guy came home early on Wednesday so I could go to the doctor sans kiddos and by the time I got home, he was miserable. He never got it as bad as I did b/c we got him on meds before it got worse, luckily! I'm not sure I could have handled his drama- lol. Men are wusses.

Anyway, the sickies put my plan out of whack, so many things were shifted to other days or not made at all. I did make several of the things though. I have decided that although the table I made last time with breakfast, lunch, and dinner is pretty and all organized-like, it really isn't realistic... yet. I think I will just post some meal ideas and select from them. This is better for me right now!


Here's some highlights from meals past:

Baked oatmeal.

I added chocolate chips, so it came out pretty dark, but it was good- not great though.

Crock Pot chicken-n-dumplings. Delish!!

Calzone.

Oatmeal smoothie.

It was very tasty!

Meatloaf. I made mini loaves for Benjamin (using his egg replacer and rice milk).

I was going to be gone for dinner time, so I left directions for the hubs! :)

Crock Pot taco soup- yum!

Mini pizzas for lunch one day.

The kids LOVED the mini pepperonis! Brooke says normal sized pepperoni's are too spicy, but not the baby ones... mmmkay! Ben's are the ones w/out cheese.

Loved the crock pot sloppy joes! Served them on rolls with a slice of provolone!

Crock pot steel cut oatmeal. This was pretty good. Benjamin LOVED it and ate seconds and thirds on the days he ate it! Winner! 

 This is the cilantro lime Chipolte-inspired rice. Totally loved this!!

The crock pot salsa chicken was SO good and I served it over the rice.

Banana cookies made so Ben could eat them. He ate them. LOTS of them.

Dump cake. Yummo! Apparently I forgot to take pics of the cookies and cake after they were cooked and before they were all gone! Oops! 

This was crock pot country style pork ribs and skillet potatoes. Yummy!

And finally.. Monster cookies! These are so good!


They have oatmeal in them. Oatmeal=healthy. So, yeah, they are healthy cookies... or something.

I made a delicious crock pot beef stroganoff.

This week we are really focusing on using up what we have in our freezer and pantry.
So, we will have leftover bbq pork tonight and the rest of the week we will have:
Tilapia w/ potatoes
That dang vegetable beef soup that I keep saying we are going to eat but haven't yet! (My mom made it and it is frozen).
Pot stickers.
Frozen skillet meal.
Baked chicken.
I know I will see something that I will have to try.. and I will throw that in the mix!

Sorry for the lame meal plan this week, I will hopefully do better next week! :)

Derailed

I was very excited for a rare night out with Corey! We were going to a benefit for the Boys and Girls Club. This was a big deal. There was going to be over 600 people there, musical entertainment, a casino area (your donation got you chips that had no cash value, but sure were fun to pretend with!), a ton of silent auction items, several big ticket live auction items, and some delicious food. Oh, and booze. LOTS and lots of booze.

Brooke went to Grandma and Papa's house for her first sleep over and our friends' daughter, who has sat for us in the past, was watching the other two at our house.  Before we left, Corey asked the sitter if our 10pm end time was flexible. She said, "just as long as you come home, I'm fine with whatever".... We haven't yet decided if her reply or Corey's underwear jinxed us, but something did!
 
 This event was held at an old family farm that is now used for special events. They had a huge barn that they used to display all of their auction items.  I had fun bidding on a few things.. even knowing I would be outbid. I can't compete with these big spenders! It was sort of like Ebay to me. At some point you bid just to up the ante... (and get more money for the B & G club, of course!).

Here was the casino area. The weather was gorgeous and this entire event was outside.

As we were visiting with friends, we were interrupted a few times by the blaring of a train whistle. The farm was RIGHT next to very active train tracks. You not only heard the whistle, but they were so close you heard the trains going bumpity bump over the tracks. It was also like you could hear the speed of the train, if that makes any sense. In fact, in order to get on to the property, you had to drive over the tracks- and this was the only way in and out.

I was talking to a friend and noticed yet another train fly by, but thought it odd that it didn't blow its whistle. Then all of a sudden we all heard a loud thump. I can't find the words to express this sound, but it was something I will never, ever forget. It shook my insides and I immediately knew that something awful had happened, even without seeing anything. What happened next made me feel like I was in a movie. People started getting up from their tables and began running towards the parking lot and tracks. Men in slacks and suit coats, women in dresses and heels, all began fleeing. No one knew at first what they were running to, and we were all beside ourselves when we saw what had caused that horrible sound. The train that I had seen speeding down the track just seconds before had crashed into the back of another train that had been stopped on the same track. The train and its two engines derailed along with five other train cars from the  parked train. It was UNREAL. Corey had taken off (I had never seen him run so fast in his life, actually) and disappeared into the frantic crowd of onlookers. I lost where he went and began to panic. I was yelling his name into the crowd and got nothing back. I just kept making my way through the crowd and towards the wreckage. I had NO idea where he was. I was crying and completely freaking out. On the way to this event we had actually talked briefly about what I would do if he died before me. You know, that stupid conversation about how you want to be buried, etc. I don't like this conversation or these thoughts, so I quickly ended it. And then, here we were with this travesty.

This derailment happened right where the driveway to get to the farm was. EXACTLY where the driveway is. One of the engines was on part of the driveway and some of the crushed cars were on the other side of it. The engines were still running and that is also a sound I'll never forget. I kept thinking that they could explode at any minute and we all would have been hurt. Someone then told us all to move back and get back from the tracks and wreckage. As we were all backing up I noticed men coming out of the engine that was closest to us and jumping off. One of them was my husband. I ran to him as he slipped and slid down the embankment a little, and I helped him up. He was frantic, his adrenaline pumping, and I was a basket case of tears and worry. He kept saying that he had to see if anyone was there and help them, that he couldn't just be a bystander if someone was in there. I was, selfishly, upset that he would do that and risk not being around for our family. I love that his instinct was to help others, but I was so very worried and upset that I couldn't find him!

It was obviously a little chaotic as lights and sirens began showing up, on the other side. We all realized very quickly that we were, in fact, stranded there. No way to get out since our only entrance/exit was now blocked with tons of derailed railroad cars. This happened at 9:12pm. The venue had a crisis management plan, but train derailment was not covered (I'm sure it is now though!). Since we were stuck, the party went on and eventually people loosened up a bit... or a LOT. Not me, however. I was a mess and just became less of a mess, I suppose. I just wanted to be home and out of there. I wanted my babies. I was also a little freaked out about not knowing how long we would be stuck there since I am a nursing mom and hadn't planned on that!!

In the end, thanks to the collaborative efforts of the police and fire departments, we were able to get out. There had been rumors of us being there all night and them having to clear a path for us to get across the tracks and then having us bussed places, or having friends pick us up. Rumors that we wouldn't be able to get our cars out for a week. Instead, we were able to get into our own vehicles around 12:30am and form a loooooong line. Fences were cut down in spots and a path was cleared for us to drive through a field at the back of the property. From there we got on to the cart path at an adjacent golf course and wound our way around and eventually out of the golf course and onto a road. When my wheels hit that road, the words "free at last" rang in my head!

This event is an annual thing and I'm pretty sure I won't be going back.... By the grace of God, no one was hurt in this crash. It is truly amazing! I talked to another person at the party who was out on the driveway smoking and said he saw the engines come right at him, stopping several yards in front of him. One of the valet's was also very close and one of the crushed train cars nearly hit her own car. A police officer I talked to had JUST walked across the tracks, seconds before the crash! So scary, but so thankful there were no injuries.

Here's some pictures: It may be hard to tell what you are looking at. The tracks go from left to right. there is one engine derailed on this side of the tracks that you can see (with the 4285 on it). The other engine is derailed completely perpendicular to it (you can see the back end of it, in front of the other engine). The crumbled green and red tain cars were the last cars on the train that was stopped on the tracks and they were stacked on top of each other (green was on top). Both of these were completely off of the track. The little stop sign you see in the last picture is where the cars leaving the farm were supposed to stop at before crossing (it's on the driveway).









And here's a few pics from our adventure through the field and the golf course. They had put out cones for us to stay insdie of while driving. It was really crazy.




So I had mentioned Corey's underwear earlier. Apparently green is NOT lucky for him. The other two times he had worn his green underwear TCU lost. This time a train derailed. He believes the undies are cursed and promptly threw them away once we finally got home! 

Since this happened I'm a little leery of trains. It will wear off, but for now a train whistle makes me a little queasy. I swear the first time I heard one the other day I also heard that same thud sound in my head. It was weird. This happened a week ago and the clean up continues.

Slowly sewing along...

Little Bailey is now one month old! My how time flies! I somehow thought that staying home would make time go by a little more slowly. But, nope, time is passing quickly and my babies (all THREE of them) are getting bigger every day. They amaze me and I am so very lucky to be their mommy!
Anyway... they all still nap, thank goodness, and Bailey has been sleeping during their nap time as well (most days). So, I have actually been able to get some things sewn! Some days I nap, but most days I try to get in a little sewing or cleaning. Speaking of cleaning, the amount of dishes and laundry I do on a daily basis is enough to make me seriously consider becoming a family of nudists and eating only foods that require no dishes or utensils (think turkey legs). Seriously.

Here's what I've accomplished in the past few weeks!

 I suppose this first one isn't really an "accomplishment' since it is FAR from complete! But, I am in the process of making a Book of Colors. The pages are felt and I will add ribbons and fabric scraps to each page. I used my embroidery machine to put the names of each color on the page. I think this will be super cute when I finish it, if that day ever comes!



I added a velcro strap to the infant tub that I was constantly moving from the big tub to the floor of the bathroom, back to the tub, etc.

I've also been lucky enough to do some more pattern testing. This first dress is a Snazziedrawers pattern. If you are a beginner seamstress, this is a good dress to start with. You can find the Adeline dress pattern here. Quick and easy, not to mention cute! I also got her Petti Romper pattern and I can't wait to make one!

I made a matching hair flower clip, of course. I love these little things and they are SO easy to make!


I added this to a little shirt for Bailey. My OBGYN's name is Frederick and with each of my three children, he always says the same few things. One of my good friends also goes to him and he's said the same things to her. One of these things is that each time he delivers a baby he says that it should be named Frederick, if it's a boy, and Fredericka, if it's a girl. So.. I made this little shirt for Bailey to wear when I go for my 6 week post-op appt! :) I crack myself up.

I made this nap mat for a customer. This is definitely one of my favorite fabrics!

I added Brooke and Ben's names to the Lowe's Build and Grow aprons and sewed Brooke's patches on from the two projects she's completed.


I also tested this pattern, The Emma skirt, for Brynnberlee Designs. I had this Hello Kitty Halloween fabric leftover from some pants I made for Brooke last year. I made a matching shirt (just appliqued a square of fabric to it) and hair flower.


I love the asymmetrical ruffles! 



I just finished up this dress for Brynnberlee Designs as well. It is called the Cara dress and she hasn't yet released the pattern. I made a little boo boo on the blue sash, so I covered it up with a band of lace. I like the way the lace looks! :)




It's super cute with the ruffle at the top of the dress!





I've also made a couple burp cloths and have to work on a couple of blankets. I'm eager to really get back into a sewing routine, but some days I just don't have the energy....YET! I can't wait until I get to sleep for more than 3 1/2 hours in a row! :)

Meal Plan: 9/26 - 10/2

Last week's meal plan went really well! I didn't stick to it 100%, but it was nice to have an idea of what we were going to be having! One night we had leftovers and my parents took us out this weekend for our birthday's. A change I will implement this week is actually printing out the Meal Plan and putting it on the fridge. I added breakfast and lunch for this week and we will see how that goes! I definitely need to be better about giving the kids a more complete and filling breakfast! :) We shall see if my plan is a little overzealous, but hopefully it isn't!

I am really trying to plan dinners that are quick and easy. With a newborn that cluster feeds ALL evening, I find myself sitting in the living room and nursing her through most dinners. Tonight, in fact, Corey said, "Hey, you actually got to eat your dinner with us!". I plan on doing a lot of crock pot cooking, using my awesome Pampered Chef Deep Covered Baker, and other things that don't require a lot of prep work.

Meal Plan: 9/19 - 9/25

This week's meal plan is going to be an easy one to start with. I'm not trying new recipes or anything fancy schmancy. I will probably end up baking something from Pinterest or one of my favorite food blogs, but for dinners I'm sticking to things we have. Before I go crazy with trying to plan out some new meals and try new things, I need to use up what we have! Also, the hubs is going to be out of town for three days this week so I need to keep it simple! :)

Meal Planning!

I've missed blogging SO much!! But, let's be honest.. with three kids under 3 1/2, one of whom is 3 weeks old today, I don't have a lot of free time and when I do I'm either cleaning up or trying to sleep! However, I definitely have a lot of posts planned and will get to them slowly but surely!

I am super duper excited to start something new... MEAL PLANNING!! I stumbled upon the Keeper of the Home blog and was inspired to join her Plan It- Don't Panic 6 week meal planning challenge and joined the FB group as well! There's nearly 600 members in the group so far! Every Monday Stephanie is going to post her meal plan on her blog and anyone is welcome to link up and post theirs. People have already started posting their plans on the FB page and it is nice to get ideas from others! I love the accountability piece of this. I committed to it and I've wanted to meal plan for a long time (I did it for two weeks a while back then was hugely preggers and thus lazy and slacked off..) so this is perfect! I'm competitive to a fault so I'm looking at this as sort of a competition. I will win if I stick to it for the 6 weeks! Here's hoping that by then it will be a habit and will continue! I suppose the prize is less stress and a plethora of meal ideas, recipes, and such. I'm also thinking a bonus to this deal will be some new blogging friends!
While the idea of planning meals is totally appealing to me, the actual "how to plan it" part is a little daunting. I'm a recipe Pinterwhore. My "FOOD" category on Pinterest is obnoxiously full of recipes. I have made many of them, but there's probably no way I could ever try them all! I'm drawn to the pretty pictures like a mosquito is drawn to a bug zapper! Someone suggested a website called Say Mmm and I love it! I haven't had a ton of time yet to figure it all out, but I've added some recipes and links to recipes. It is going to be an awesome place to keep track of what we will be eating (on the calendar) as well as my grocery list! Love it!  It has some great features. I will be able to share my calendar, meals, and recipes with others. It even has a way to post it onto my blog. Looking forward to fiddling with it and hoping it can become a tool that I can really utilize. Oh and you are able to access it from your Iphone too!

The challenge doesn't start until the 26th, but I think I will start this Monday, the 19th. Since I like to take pictures of my food, I'm thinking I will take pics of the food I make and update my post with them as well as review new ones I try. We will see.

As I was cleaning up the dishes from dinner tonight though, a thought crossed my mind. If I'm doing all of this planning, it means I will be doing all of the cooking! Methinks I need to strike a deal with the hubs. I cook, he cleans.  Sounds good to me!! Either that or I need to schedule some Triple D days (Dad Does Dinner)! :)

Another goal I have (assuming I get the hang of the dinner planning), is to be better about planning healthy breakfasts and doing a better job of having well rounded meals. It seems like too often we just have the main dish and not really side dishes, salad, fruit, etc. My 18month old son has a lot of allergies (milk, eggs, sesame, tree nuts, oranges....) so sometimes I alter recipes so that he can eat them! I will post if the recipes are egg/dairy free just in case you also are looking for egg and dairy free choices!

Here's what we have for this week so far:
Monday: Pillsbury Crescent Dogs
Tuesday: Smoked Sausage (from Indiana- we pack it with us across the country after every 4th of July Family Reunion!- yes, it is that good!), Beans, and brown rice
Wednesday: Slow Cooker Chicken and Dumplings (changes I made: I used one can cream of chicken and one can cream of mushroom, instead of adding water I added one can of low sodium chicken broth (14oz), and I only used one can of biscuts- it was plenty). This was DELICIOUS and is definitely a keeper!
Thursday: Corey's birthday!! Homemade pizza (or calzone?...), salad, and lemon bars
Friday: ??
Saturday: ??
Sunday: cookout at friend's house

Other random stuff I have made this week:
Baked Oatmeal (I omitted the cranberries and added 2 mashed bananas and chocolate chips. I also cooked it in my Pampered Chef Deep Covered Baker).
Rice Crispy Treats (made with Earth's Best faux butter so Ben could eat them)
And although I made these last week, you NEED this recipe and you NEED to make these. You will thank me.. or not since it's hard not to eat one after another after another. Somehow the fact that they have fruit in them and oatmeal, I can convince myself that they are "healthy". Go ahead and make Banana Cookies! Funny story about these- I didn't have any baking soda, so I asked my friend (and neighbor) if I could borrow some. I promised him that I would give him some cookies in return. He and his wife were busy all weekend and well.. when I saw him early this week and he asked about the cookies.. there were none left! oops!
